There are several factors to consider when choosing the right wax for a particular cheese type, and method of application.  These include: flow properties, coating weight, flexibility, resistance to cracking, cutting properties, setting time, adhesion to dispersion coating or cheese cloth, and colour stability.

As well as protection of the cheese, wax offers branding and cheese style or flavour "coding" opportunities.  The most popular colours are natural, yellow, black and red, and others colours are available on application.
